Hi, im avoiding all starches while trying to heal Leaky gut. I haven't been using tapioca starch because I'm unsure about lectins or whether it should be included as a starch when people say to not have starch while trying to heal leaky gut.. Is it safe to include it in recipes?

Jada,

Did your blend work for pizza crust? I have experimented with coconut flour and (separately) cauliflower as the base of pizza crust. I love coconut flour for other things but it was a bit sweet for the pizza. The cauliflower recipe was A LOT of work. I might try an altered recipe. Just wondering if you've had any success.

Thanks for this! Going paleo for the month of Jan and I am having major troubles with sorting out these questions. Coming to the conclusion that the paleo diet is just not really made to include any baked goods (for practical and health reasons) but I still am dying to perfect a paleo pizza crust, so these tips are helpful :) Think I'm going to try a mix if grated cauliflower, coconut flour, tapioca flour, eggs and coconut oil. We'll see what happens... :)
